GOOEY PEANUT BUTTER S’MORE BROWNIES

On this cloudy Tuesday, I think a little pick me up is in order. These Gooey Peanut Butter S’more Brownies will do the trick, don’t you think?!

GOOEY PEANUT BUTTER S’MORE BROWNIES

INGREDIENTS:

  • 1 box  brownie mix for a 9 x 13″ pan
  • 1 jar (7-1/2 oz.) marshmallow creme
  • 1 cup prepared creamy chocolate frosting
  • 1 cup  creamy peanut butter

INSTRUCTIONS:

Prepare, bake and cool brownie mix according to package directions for 13 x 9-inch baking pan.
Evenly drop marshmallow creme onto cooled brownies with spoon.

Microwave frosting in small microwave-safe bowl at HIGH 30 seconds or until melted and smooth. Repeat with peanut butter.

Pour melted frosting, then melted peanut butter over marshmallow creme and swirl with butter knife to marble. Let cool completely. To serve, cut into squares.

Happy Birthday Mom

We celebrated my mom’s 69th birthday this past weekend. For weeks I had been thinking of something special to do for her party, I finally decided to ask our family for reasons why my mom is special to them and reasons why they love her. I put each reason why in a balloon and hang them on her mantle. During the party she popped each balloon (actually the kids took turns) and she read out loud each reason why she is loved and adored. We absolutely loved watching her read each reason. I’m pretty sure she liked it…she kept sending me messages saying how happy she is.

I also made her a Salted Caramel Brownie Trifle and put sparkling candles on top. It was a big hit with the kids and adults.

Salted Caramel Brownie Trifles

Ingredients

  • 1 box fudge brownie mix (13-inch x 9-inch pan size), plus ingredients called for on the box
  • ¼ cup coffee, room temperature
  • 1 jar caramel sauce (ice cream topping)
  • Coarse sea salt
  • 6 individual snack cups of prepared chocolate pudding (found in refrigerated aisle)
  • 1 carton (8 oz) frozen whipped topping, thawed
  • 3 Heath chocolate toffee bars (1.4 oz. each), crushed

Instructions

  1. Prepare brownie batter according to package directions, substituting the coffee for the water called for on the box. Bake in greased pan at 350 degrees F for 20-25 minutes or until a toothpick inserted near the center comes out with moist crumbs (be careful not to over bake). Cool on a wire rack. Cut into ¾-inch pieces.
  2. Once brownies are cooled and cut, you can begin to prepare your trifles.
  3. In the bottom of a trifle dish, place pieces of brownie to cover the bottom. Drizzle caramel sauce over the brownies and sprinkle with a very small pinch of sea salt. Add a layer of chocolate pudding, a layer of whipped topping, and a sprinkling of crushed Heath. Repeat layers to fill the dish, finishing with whipped topping. Drizzle the top with a small amount of caramel sauce and a sprinkling of crushed Heath bar. Refrigerate until ready to serve.

On my mom’s actual birthday some of the kids and I pooped over and brought her some homemade Chicken Vegetable soup, cheddar biscuits and a chocolate cupcake.

I hope this past weekend my mom was filled with lots of love and laughter!

LOVE

LOVE, It’s the greatest gift we can give our children, ourselves, and it’s the greatest gift we can spread to  the world. One of my sayings is I LOVE love. I do. I love to give love, I love to receive love. Just seeing the word makes me feel happy.

I picked this sweatshirt to wear today because I needed to spread some love in my own home. One of our kids had something crummy happen last night that broke his heart and when your child hurts a mother hurts worse. This morning I decided to stand up and chose LOVE over sadness, over heartbreak, and over disappointment. Today I am focusing on LOVE.

I got this cute sweatshirt @target. It is so cozy and soft and represents how I feel and want to give to others.

Chocolate Mocha Cake with Raspberry Filling

I have been going through my recipes to find the perfect chocolate cake for my mom. Her birthday is this weekend and I always make her some type of chocolate dessert. She LOVES chocolate!  As I was going through my chocolate recipes I came across this cake that is not only delicious but so beautiful. I made this for my mom a few years ago and she loved it so much she requested it again the next year.   The cake is so moist and has the perfect balance of chocolate and Raspberries.

for the cake

2 cups all-purpose flour
1 cup cocoa powder (I used Hershey’s Special Dark)
2 cups sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 eggs, slightly beaten
1 tsp. pure vanilla extract
1 cup sour cream
1/2 cup canola oil
1 tsp. white vinegar
1 cup hot coffee (hot water will work too)

for the filling

1 cup unsalted butter, softened to room temperature
3/4 cup seedless raspberry jam
1 1/2 cups confectioners’ sugar

for the frosting

1 cup unsalted butter, softened to room temperature
6 ounces bittersweet chocolate, melted and slightly cooled
2 cups marshmallow cream
1/4 tsp. almond extract
6 Tbsp. confectioners’ sugar

Prepare the cake:

Preheat the oven to 350 F. Butter 2 8×2-inch round cake pans. Line the bottoms with parchment paper, grease the paper, and then flour the pans (gently tap out any excess flour.)

In a large bowl, whisk together the flour, cocoa, sugar, baking powder, baking soda, and salt. Add the eggs, vanilla, sour cream, oil, vinegar, and hot coffee (or hot water). Using a large rubber spatula or wooden spoon, mix everything together until the batter is smooth.

Divide the batter evenly among the prepare pans and bake for 35-40 minutes or until a thin knife inserted into the center of a cake comes out clean. Remove the cakes from the oven and allow them to cool in the pans for about 20 minutes before releasing them onto cooling racks. Cool completely before adding the filling and frosting. [Note: Cake can be made in advance. Well covered, the baked cakes can be refrigerated for 2 days, or frozen for a month.]

Prepare the filling:

In the bowl of a stand mixer, fitted with paddle attachment (or any large mixing bowl, if using hand-held beaters), beat the butter on medium-high speed until creamy (about 3-5 minutes). Add the raspberry jam and beat to combine. Turn the mixer down to low speed and add the confectioners’ sugar. Beat until smooth. Cover and set aside until ready to use. [Note: You can make this a day in advance, just be sure to cover it well and to keep it refrigerated.]

Prepare the frosting:

In the bowl of a stand mixer, fitted with paddle attachment (or any large mixing bowl, if using hand-held beaters), beat the butter on medium-high speed until creamy (about 3-5 minutes). Add the melted, cooled chocolate and beat until well combined and fluffy. On medium-speed, add the marshmallow cream, almond extract, and confectioners’ sugar. Once everything is combined, increase the speed to medium-high and beat until the smooth and fluffy. Cover the bowl and refrigerate for 30 minutes. [Note: The frosting can also be made a day in advance, just be sure to keep it well covered and chilled until ready to use.]

Assemble the cake:

If the cakes have domed tops, use a serrated knife to gently slice off a thin layer…just enough to give them an even surface. If the raspberry cream filling has been in the refrigerator, give it a good stir to soften it up a bit. (If it’s too stiff, leave it covered at room temperature until spreadable.) Spread the raspberry cream over one of the cake layer. Place the other layer on top of the filling. Frost the rest of the cake (top and sides) with the chocolate buttercream.

SOUPS ON!

On this rainy chilly day soup is a must! Have you ever tried White Chili? Oh my gosh, it is so good and warms your soul.

I triple this recipe for our family and we barely have any left overs.

White Chili

1 tablespoon oil
1 medium onion, chopped
1 garlic clove, minced
1 teaspoon ground cumin
4 skinless, boneless chicken breast halves
1 can white kidney beans, drained
1 can garbanzo beans, drained
1 can white corn,drained
2 cans chopped mild green chilies
2 cans chicken broth
Monterey Jack cheese, shredded
Avocado
Tortilla chips
Chopped Jalapenos

Over medium heat, cook the onion, garlic & cumin in the hot oil, until onion is tender.

In slow cooker, combine the onion mixture with the chicken (I use frozen), beans, corn, green chilies & broth.  Cover & cook on high for 4-5 hours, or on low for 7-8 hours.   Remove chicken & shred & return to slow cooker.

Serve with shredded cheese, sliced Avocado, tortilla chips and some of us like it a bit spicier so we add some chopped Jalapenos.

Family Fun Night – Chopped Jr.

A few weeks ago a friend of mine posted about doing Chopped Junior with her kids.  It looked like they were having a blast! With all our little chefs in the house I figure, why not try it.

OH MY GOSH, the kids had SO MUCH FUN! I found an old picnic basket and looked around our kitchen for food and in 30 minutes we were ready to go!

  1. Pizza crust
  2. Tomato sauce
  3. Salsa
  4. Carrots
  5. Mushrooms
  6. Butter
  7. Tomatoes
  8. Pepperoni

OK, I will admit, carrots aren’t too bad on a pizza 😊

The third course was the best….dessert:

    1. Saltine crackers
    2. Green Apples
    3. Chocolate and Vanilla Frosting
    4. Syrup
    5. Whipped Cream
    6. Carmel and Chocolate Sauce
    7. Blackberries
    8. Cinnamon and Sugar
    9. Gram Crackers

*Clearly one of the little chefs won big points with his M+E plate presentation…the girls thought that was cheating, I call that a very smart young man!*

The kids got 30 minutes for each course and then they had to present their creations to us. Of course there were no winners….well except for me and Eric. As the kids were busy cooking and creating we got to sit back, enjoy a fire and have a drink. I call that a Win-Win kind of night 😊

And That’s a Wrap

What a great Valentine’s Day we had! My oldest son, Connor, picked up our youngest daughter from school with a valentine balloon and box of chocolates.

Our middle son, Riley,  dropped off a balloon and box of chocolates to their Nana.  As a mother with 3 boys I think it is so important to show young men how to treat women. I want them to learn at a young age how to respect and cherish all the women in their life and hopefully this will carry on with how they treat their girlfriends and wives. The picture below isn’t great because I stayed in my car while Riley went to my mom’s door. This is a moment I wanted Riley to share just with his Nana and from the looks of it, she was shocked!

And to end our night I made homemade french bread and Johnny Marzetti Casserole. I also bough sparkling juice to filled the kids red champagne flutes with (thanks to my wonderful husband for the beautiful flowers I used for our center piece).

*Johnny Marzetti Casserole*

  • 8 ounces rotini pasta
  • 1 pound ground beef
  • 3/4 cup chopped onion
  • 1 clove garlic, minced
  • salt and pepper to taste
  • 1 (14.4 ounce) can diced tomatoes
  • 1 (15 ounce) can tomato sauce
  • 2 cups shredded Italian cheese blend
  • 1 1/2 cups sour cream

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Bring a large pot of lightly salted water to a boil. Add pasta and cook until just al dente, 6 to 8 minutes; drain. Run cold water over the pasta to stop pasta from cooking further. Set aside.
  3. Meanwhile, cook the ground beef  until it is completely browned and crumbled, 7 to 10 minutes. Mix in the garlic, continue to cook and stir another 5 minutes. Season with salt and pepper. Remove from heat and stir in tomatoes and tomato sauce. Allow to cool five minutes.
  4. Mix pasta and meat together sauce together. Lightly grease a large casserole dish. Spread part of the pasta mixture over the bottom of the dish. Sprinkle the Italian cheese blend and sour cream over the pasta and continue to layer until all the pasta is gone . Cover dish with heavy aluminum foil. Bake in preheated oven for 45 minutes; remove foil and sprinkle more cheese evenly over the casserole. Continue baking until Cheddar cheese has melted, about 5 minutes. Rest for 10 minutes before serving.

*Quick Homemade French Bread*

Ingredients

  • 1½ cups warm water
  • 1 tablespoon honey
  • 1½ teaspoons salt
  • 1 tablespoons Active Dry Yeast
  • 3½ – 4½ cups flour

Instructions

  1. Combine water, honey, salt and yeast. Let sit for 5-10 mins until there is a foam on top.
  2. Knead in flour until no longer sticky.
  3. Cover with a towel and let it sit for 20 mins. while preheating the oven at 400*
  4. Cut slits in the top and bake for 15-20 mins.

I hope someday our kids will look back on holidays and remember the feeling of love. You can have all the money in the world but nothing replaces the feeling of pure unconditional love. My gift to our children is UNCONDITIONAL LOVE. I believe when you live in a space of unconditional love, joy and fun it radiates all through your life. This is my life long gift to our children and in return I pray they spread the same kind of love through their life and it will make this world a better place.

Valentine’s Day

Happy Valentine’s Day for our Party of 9.

Our youngest made her last Valentine’s Day box….ever! She went through Pinterest and found a cupcake box she wanted to make so we designed it with supplies we had at home.

The kids woke up to a Valentine’s breakfast. I saw the idea on Pinterest for the Love breakfast but changed it to what the kids like to eat.

Eric and I woke up to the sweetest cards from our Cissy. I love how she loves.

Valentine’s Day Treats

My little Cissy goes over to her nana’s house once a week for “Cooking Camp”. She always brings home yummy treats. This week Cissy made valentines cupcakes. Aren’t they beautiful? She decorated them herself.
